I was able to tackle the OMAC endeavor I set out to accomplish earlier this month and I am so pleased with the outcome! My freezer is stuffed and we have been eating great!
In fact, this almost makes me want to run out and get a separate chest freezer for our garage! Oh if only I could find a good deal on one of those! I made everything except the chicken marsala (ran out of chicken) and the white chili (ran out of steam). I had to separate the cooking over about 4 evenings because I wasn’t able to get to all of the cooking last weekend like I had originally wanted to. Next time I do this I will shop and prep on Friday evening and cook the whole day Saturday to get everything done in one shot.
This method is wonderful because it is so efficient! I also love that I don’t have to clean up bunches of pans and cooking bowls, etc. every other night. Just pull out something from the freezer, heat it and throw away the pan! The leftovers have also been great for Bryan and I to bring for work lunches.
Here is what we have for the month:
- 18 breakfast egg/cheese muffins
- 28 apple struesel muffins
- 36 pear pancakes
- 10 lunches worth of red chili
- 24 corn dog muffins
- 4 bags of beef stew
- 4 brocolli & cheese chicken bakes
- 2 large pans of baked ziti
- 4 bags beef stroganoff
- 4 black bean and rice casseroles
- 4 mexican cornbread casseroles
- 4 chicken & chili casseroles
- 6 meals worth of parmesan-paprika porkchops
In fact, I think this is going to last us till mid- December!
Again, credit for all of the recipes, directions, food labels, grocery list, and the whole month’s menu goes to onceamonthmom.com. Check out her site when you get a chance!
By the way, all of the groceries for these meals cost about $400.00. Since this was my first time, I did not do a great job seeking out specific deals on ingredients or use coupons (gasp!), so I know I could have done much better. My goal for next time is to seek out deals for the menu plan in advance, but still $400 for all of that food is not too shabby!
