This is a weight watchers recipe that my friend told me about. She said it came out really good! I took the day off work today due to the bad road conditions, and I was in a slow cooker kind of mood. While looking through the pantry I realized I had a bag of lentils that had been sitting in there for quite some time, so this seemed like the perfect opportunity to try out this recipe! I’ll let you know how it turns out.
Ingredients:
2 medium carrot(s), peeled, cut into large chunks
2 stalk(s) (medium) celery, ribs, cut into large chunks
1 medium onion(s), cut into large chunks
2 clove(s) (medium) garlic clove(s), minced
2 cup(s) dry lentils, picked over
3 leaf/leaves bay leaf
1/2 tsp dried thyme, crushed
1/2 tsp table salt, or to taste
1/4 tsp black pepper, or to taste
8 cup(s) canned chicken broth
4 oz Canadian-style bacon, diced (4 or 5 slices)
